Homemade Drop Biscuits Recipe FAQs

Although both are delicious, there are a few differences between traditional biscuits and drop biscuits.

Regular biscuits are rolled out, kneaded, and cut with a round biscuit cutter.

On the other hand, a drop biscuit doesn’t require any kneading, rolling out, or shaping, but instead is mixed together and scooped into the pan with a spoon or cookie scoop.

Because of this, traditional biscuits are typically taller, fluffier, and have more distinct layers, while drop style biscuits have a more irregular shape and are slightly more dense in texture.

If your drop biscuits didn’t rise, then it’s most likely due to using expired self-rising flour. I recommend always using fresh flour when making homemade biscuits/breads and storing them in an airtight container to maintain freshness.

Check out this post for more tips on baking with self rising flour.

If your drop biscuits are crumbly, it’s most likely due to adding too much flour.

I personally now weigh my flour in all my baked good recipes using this awesome scale and would highly recommend getting one.

Weighing your flour is the most fool-proof method to ensure you are adding the correct amount.

I recommend storing in an airtight container at room temperature.

When stored in an airtight container at room temperature, these drop biscuits will remain fresh 3-4 days.

If you don’t plan on eating them during that time, I’d recommend freezing them.

Yes, drop biscuits can be frozen up to 3 months.

To freeze, let biscuits cool completely after baking them, place in a freezer safe bag or container and freeze until ready to eat.

To reheat, bake in the oven at 350 degrees for 10-15 minutes or until warm.

If desired, cover with aluminum foil to prevent the tops from over browning.

Cara’s Tips: What is the secret to a good drop biscuit?

  1. Don’t overmix the biscuit dough – Stir the mixture until just combined and it’s okay if looks a bit lumpy. The less you stir, the softer + fluffier the biscuits will be once baked.
  2. Freeze & grate your butter – This is a trick I use with all my biscuits and it ensures the perfect amount of butter gets evenly distributed in every biscuit. I recommend freezing your butter at least 15 minutes in advance and using this affordable box grater.
  3. Use a cookie scoop – This dough can be sticky and using regular spoons can be a pain. That’s why I recommend using a cookie scoop to scoop out your biscuits in the pan. I love using this set for all my biscuits and cookies.

P.S. Don’t forget to grab a bag of fresh self-rising flour for the best biscuits!
