They’re quick, easy, and crazy simple to throw together with just a few ingredients in a short amount of time. 

Not to mention they’re super yummy!

Are these Dinner Rolls like regular yeast dinner rolls? 

These no yeast dinner rolls are delicious, soft, and buttery, but they’re not your typical big, tall, fluffy, soft rolls you’re probably used to. 

Instead these homemade dinner rolls are more like a soft muffin/biscuit/roll hybrid. 

They remind me a lot of those cornbread muffins you can get at Cracker Barrel, minus the sweetness. 

Our family loves them and they’re one of my favorites because they’re super quick and easy to make.

Tips for Making No Yeast Dinner Rolls

Tip #1 – Use Fresh Flour

Because this recipe uses self-rising flour and no yeast or other rising agents, it’s extremely important that your flour (and the leavening agents in your flour be fresh).

Using fresh flour and other fresh ingredients in your recipe will not only taste better, but it will also help ensure your dinner rolls bake and rise perfectly.

If you try making these rolls with older flour, the baking powder in the flour might not perform like it should and your rolls might not rise properly.

How to Ensure Your No Yeast Dinner Rolls Rise

These homemade dinner rolls are made simple with self-rising flour, which has leavening agents including baking powder and salt already in it.

Because this is the only rising agent in these dinner rolls, it’s SUPER IMPORTANT to make sure your self-rising flour is not expired.

If you are not sure of how old your flour is, either buy new flour or add an extra ½ tsp of baking powder to your dough, just in case. 

Tip #2 – Use Room Temperature Ingredients

For the best homemade dinner rolls, I recommend using room temperature ingredients. Simply set out your eggs, sour cream, and milk about 15 minutes before preparing your rolls.

Using room temperature ingredients helps create air pockets in your batter, which results in fluffier, softer rolls.

In contrast, if you use super cold ingredients, your dinner rolls will be more dense, tougher, and flatter, which nobody wants.

Tip #3 – Freeze/Grate Your Butter

I use this simple trick whenever I make my delicious 3-Ingredient Biscuits, and it’s SO good! 

Simply put your butter in the freezer for 5 minutes, then use a Box Grater to grate the butter into your flour. 

Grating your butter only takes a minute or two and it will give you perfectly even pieces of butter throughout your dinner rolls. 

Tip #4 – Don’t Overmix Your Dough

Unlike a lot of bread and roll recipes out there, these easy no yeast dinner rolls are best mixed by hand to avoid over-mixing.

Overmixed dough = dry, tough rolls, which nobody wants.

Don’t use an electric mixer or stand mixer, but instead just use a rubber spatula and stir the dough until JUST combined.

The dough will be sticky, lumpy, and slightly wet, and similar to a muffin batter.

It typically takes me about 13-15 stirs, but this can vary.

Tip #5 – Don’t Overbake

Just as its important not to overmix, don’t overbake these dinner rolls.

Bake until the edges are a light golden brown.  

Tip #6 – Glaze/Broil After Baking

For the most delicious (and pretty) homemade dinner rolls, I recommend using a pastry brush to glaze the tops with my homemade honey butter and popping them under the broiler for 30 seconds or so until they are a beautiful, golden brown.

The honey butter adds the perfect buttery sweetness, and it crisps up slightly under the broiler for some amazingly delicious rolls!

Can I use bread flour, or gluten-free flour for this recipe?

Although I haven’t personally tried this recipe with other flours, this recipe should work with those, although the ratio/amounts might differ.

Can I use Greek yogurt or mayonnaise instead of sour cream? (Sour cream substitutions)

Yes, you can easily swap out sour cream with Greek yogurt at a 1:1 ratio, or use ¼ cup mayonnaise.

Can I add herbs and spices to these dinner rolls?

Yes! This recipe is a great base dinner roll recipe and can easily be customized to your family’s preferences/likes.

I make a delicious cheddar, garlic, and herb version I’ll share the recipe for soon that pairs great with pasta dishes.

How do you melt butter for these rolls?

If you want to glaze these rolls with my honey butter or just regular butter, simply place the butter in a microwave-safe bowl, cover with a paper towel, and depending on the amount microwave for 15-30 second increments at 30% heat.

Continue heating until fully melted.

How do you quickly bring milk/buttermilk to room temperature?

If you forgot to set your ingredients out ahead of time, you can quickly bring your milk or buttermilk to room temperature by microwaving for 20-30 seconds at 30% heat.

Be careful not to overheat it.

Can I freeze these no yeast dinner rolls?

Yes, these dinner rolls can be frozen for up to 2 months in a freezer safe bag.

No Yeast Dinner Rolls

  • 2 large eggs
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/2 cup milk (2%, whole, or buttermilk)
  • 2 cups self-rising flour
  • 4 tbsp. butter, COLD and grated

Honey Butter Glaze (optional)

  • 1 tbsp. butter, melted
  • 1/2 tbsp. honey


Instructions

  • Preheat oven to 375 degrees F and spray a large 12-count muffin pan with non-stick cooking spray.
  • In a large mixing bowl, whisk together eggs, milk, and sour cream until smooth.
  • Next, place 2 cups of flour in a separate mixing bowl and grate in 4 tbsp of COLD butter that was in the freezer for 5 minutes. Stir until evenly combined.
  • Begin adding in flour mixture a little at a time to your wet ingredients and stir until JUST combined. Do not overmix. The dough mixture will be lumpy like muffin batter.
  • Use a medium cookie scoop to evenly scoop out the dough in the prepared muffin pan.
  • Bake in the oven for 15-18 minutes or until the dinner rolls are a light golden brown on the sides.
  • If desired, top the hot rolls with my honey butter glaze for a buttery and sweet finish.
  • To make, whisk together 1 tablespoon of butter that was melted in microwave for 15-20 seconds with 1/2 tablespoon of honey in a bowl until smooth. Use a pastry brush to brush on the tops of each dinner roll.
  • If desired, place dinner rolls under the broiler for 30 seconds to lightly brown the tops.
  • Enjoy!
