I originally used to make this recipe with quick oats, which make them chewier, but now prefer the softer texture that old fashioned oats give it.
How to store leftover Peanut Butter Oatmeal Bars
Leftover peanut butter oat bars should be stored in an airtight container at room temperature.
These peanut butter bars will remain fresh for up to 5 days.
Can you freeze Peanut Butter Oatmeal Bars?
Yes, these bars freeze up nicely for up to 3 months.
I recommend freezing cut, cooled bars without the peanut butter drizzle on top in a freezer safe bag or container.
Once ready to eat, thaw on the counter, or re-heat in the microwave for 20 seconds at a time until warm. If desired, top with the PB drizzle and enjoy!

For a healthier version, try replacing half of the butter with unsweetened applesauce and/or using a lower sugar peanut butter.

How to Make Chewy Peanut Butter Oatmeal Bars (Step-by-Step Recipe)
I highly recommend using parchment paper since this makes it easy to lift the bars out of the pan and makes it mess-free when cutting the bars.
Make sure you press the bars into all four corners of the pan.
Step 3:
Next you’re going to create your peanut butter streusel using brown sugar, flour, peanut butter, and butter.
Mix together until a crumbly consistency forms, then sprinkle evenly on top of the peanut butter oatmeal bars.
Step 4:
Place the bars in a 350 degree F preheated oven and bake for 25-28 minutes, or until the bars are lightly golden.
While the bars are baking, whisk together your peanut butter drizzle in a bowl by combining powdered sugar, peanut butter, and milk.
Although the recipe calls for 1-3 tbsp of milk, you may have to add more or less milk depending on the weather and other variables.
I recommend adding 1/2 tbsp at a time, whisk together, and continue adding as needed until a light drizzle is reached.
Step 5:
Once the bars are fully cooked, remove from the oven and let cool for 15-30 minutes.
Once cooled, it’s time to add that yummy peanut butter drizzle on top.
You can use a spoon to drizzle it on, or to make it easier (and less messy) I prefer using an icing bag or Ziploc bag with the corner snipped off to drizzle it on.
Step 6:
Let the bars set for 10 minutes, then cut, and enjoy!
Tip: If you use parchment paper, you can easily lift your bars out of the pan and onto a cutting board for quick + easy cutting.

Peanut Butter Oatmeal Bars
1/2cup butter (softened to room temperature)
1/4cup sugar
1/3cup brown sugar (packed)
1 large egg
1/2 tsp vanilla
1/3cup creamy peanut butter
1cup self-rising flour ((can also substitute all-purpose flour, just add 1/4 tsp salt and 1/2 tsp baking soda))
1cup old fashioned oats (or quick oats)
Peanut Butter Streusel
1/4cup self rising flour
1/4cup brown sugar (packed)
2 tbsp butter (softened to room temperature)
1 1/2 tbsp peanut butter
Peanut Butter Drizzle
1/3cup powdered sugar
1/4cup peanut butter
1–3 tbsp milk (add 1 at a time, and additional milk may be added until drizzle consistency is reached)
First use an electric hand mixer and cream together butter, sugar, and brown sugar until combined. Add the egg, peanut butter, and vanilla, and mix until well combined.
Next stir in the oats by hand until evenly incorporated. Lastly, stir in the flour by hand until just combined, being careful to not overmix.
In a small mixing bowl, combine the flour, brown sugar, peanut butter, and softened butter to make the streusel. Mix until a crumbly consistency is reached, but do not overmix. Sprinkle evenly over top the peanut butter oatmeal bars batter.
Bake at 350 degrees for 25-28 minutes until bars are lightly golden.
Remove bars from oven and let cool for 15-30 minutes before adding the peanut butter drizzle over the bars.
Peanut Butter Drizzle
While the peanut butter oatmeal bars are baking, use a whisk and combine powdered sugar, peanut butter, and milk in a small bowl. Add milk in 1/2 tbsp at a time until a drizzling consistency is reached. Place in the fridge until ready to use.
For an easy mess-free drizzle, place peanut butter drizzle in a decorator’s bag or Ziploc bag with the corner snipped off, and drizzle as desired.
Let bars set for 10 minutes before cutting, then serve and enjoy!
